When you get home after a long day in the classroom, the last thing you want to think about is what to make for dinner. That is why I have gotten into the habit of meal planning for the upcoming week on the weekend. It’s not elaborate by any means. I just have boxes laid out on the side of my grocery list with the main meals written in them. Doing this helps with quick meal selection on busy weeknights, along with not overspending at the grocery store. Over the years, I have come up with some staple meals that my family enjoys. Today, I’m going to share the BEST of these quick, budget-friendly dinner ideas with you!
1. Italian Food
While the absolute BEST italian food takes a long time to make, you can still have a decent italian meal on the table in under 30 minutes. Just boil up the pasta of your choice, warm up some sauce, add a salad or loaf of garlic bread, and voila! I like to mix it up by going between spaghetti sauce and alfredo sauce. Sometimes, I’ll use refrigerated tortellini. (I’ve found it to be more flavorful than frozen.) And if you want to add a little protein, cook up some pre-made frozen meatballs or chicken patties, or dump a can of chicken into the sauce.
Another great option are calzones! These cook up amazing in an air fryer in just 10 minutes. An oven could be used, but may take a little longer to cook. They may not be as crispy on the outside either. Here is the recipe I use from Momsdish.
2. Mexican Food
Some Mexican food can be made quickly and with only a few ingredients! A couple I make often are tacos and quesadillas. For tacos, some shells/tortillas, hamburger meat, low sodium taco seasoning, and a few toppings are all you need. It doesn’t take long to brown up the meat, add some seasoning, and put together some delicious tacos.
When I need a change, I’ll switch over to quesadillas. To make the quesadillas, add low sodium taco seasoning to canned or cooked chicken warmed on the stove. Then, spread it onto a tortilla, sprinkle on some cheese, place another tortilla on top, and carefully place it into a warmed pan. Cook each side until it is slightly brown and the cheese is melted. This usually takes 5-10 minutes. Each quesdadilla can be sliced into four easy to pick up pieces.
Occasionally, I will make nachos. For this, I will either make fresh taco meat or use up leftover taco meat. Then, I warm up a can of nacho cheese. Next, I place some tortilla chips onto a plate and spoon some meat and cheese on top of them. You can, also, add other toppings like lettuce, sliced tomatoes, or salsa, if you’d like.
3. Chicken Wraps
If you like McDonald’s chicken snack wraps, you will love these! For awhile McDonald’s discontinued the snack wrap and I was disappointed, so I had to find a way to make them. In my opinion, I have found that the Member’s Mark southern style frozen chicken bites from Sam’s Club taste best, but any chicken strips will do for this recipe. Cook up the chicken either in an air fryer or the oven. Then, place enough chicken on a tortilla, so you can still wrap it up. Sprinkle on some cheese and lettuce. Then, add some Ranch dressing. A side of french fries completes the meal!
Another quick chicken wrap idea are these Buffalo chicken wraps from Tastes Better from Scratch. This one doesn’t take long to cook, but you do have to marinate the chicken in advance.
4. Shrimp
This recipe is adapted from another recipe I found online. I use frozen shrimp that I purchase when it’s on sale. I love to make this one in my air fryer, but it can be made in the oven. First, I place the shrimp in a bowl and drizzle it with olive oil. Then, I sprinkle some italian seasoning onto the shrimp. This gets cooked in the air fryer at 390 for about 12 minutes. Add a slice of lemon to drizzle onto the cooked shrimp before eating. So good!
To make it in the oven, you could add a little melted butter and cook the shrimp with the lemon slices on top. You’ll want to turn up the heat to 400 and you will need to cook it just a bit longer, closer to 30 minutes.
Serve with a salad or a packet of microwaveable flavored rice.
5. Eggs
Who says you can’t have breakfast for dinner? My kids love when we have eggs for dinner. Thankfully, egg prices have dropped, making them affordable once again. Plus eggs are packed with protein and omega-3s, among other essential vitamins and minerals. The style of eggs changes dinner to dinner. Although, omelettes are a favorite. Omelettes are great because there are so many different ways to stuff them. You can add cheese, spinach, lunchmeat, peppers, etc.
To go with the eggs, you can make bacon, hash browns, or grits! All of these are delicious options. Sometimes, I will, even, make scrambled eggs and put them into a wrap with bacon and cheese. Yum!
And if you don’t fancy yourself an omelette chef, you could invest in a Saladmaster frying pan with cover. Using one of those is the easiest way to make an omelette ever!
